Ingredients:
-3/4 c unsalted butter
-3/4 c granulated sugar
-1/2 tsp salt
-1 tsp baking powder
-2 tblspn key lime juice
-1/8 tsp lime oil
-1/8 tsp citric acid (sour salt)
-1 egg
-2 1/2 c flour
-1 c confectioners' sugar
1. Preheat the oven to 350 F.
2. In a medium-sized bowl, beat together the butter, sugar, salt, and baking powder until it's well-blended.
3. Beat in the lime juice, lime oil, sour salt/citric acid, and egg.
4.Blend the flour in throughly (no lumps!)
5.Roll 1 in dough balls on lightly greased baking sheets.
6. Bake for 14-16 min or until the bottoms are browned at the bottom.
7.Cool ON THE PAN for 10 min then transfer the cookies onto a rack.
7. Gently roll the cookies in sugar then allow them to cool completely.
